Eggs Panagjurischte – Bulgarian poached eggs with yogurt sauce
Recently I met Deniz from Bulgaria, who has been living in Germany for more than 2 years now. As it turned out in our conversation, Deniz is also a hobby chef and directly had a tip for a typical Bulgarian recipe for me: „Jajza po panagjurski„.
Since I could neither remember nor pronounce the name, he explained that these are poached eggs with a yogurt sauce, as they are prepared in the city of Panagjurischte. I was so enthusiastic about the simplicity of this dish that I used his description to cook the eggs Panagjurischte right in the evening. I experimented a bit with the ingredients and now I have my personal recipe for you.

Ingredients for the Eggs Panagjurischte (2 people)
- 4 eggs
- 200g yogurt
- 150 brine cheese
- 4-5 tablespoons olive oil
- 1-2 tablespoons paprika powder
- ½ tbsp. tomato paste
- 1 tsp garlic powder
- 1 dash of lemon
- salt and pepper
Preparation of the Eggs Panagjurischte
1. First mix the yoghurt sauce. Simply mix the yogurt with the garlic powder and a tablespoon of olive oil and season the sauce with salt, pepper and a little lemon. If you like, you can season it with some dill, that tastes great too.
2. Next, poach the eggs. Bring water to a boil in a pot and then beat the eggs in the boiling water and let the eggs falter for a few minutes.

4. Take the poached eggs out of the water, put them on a large plate and crumble the brine cheese over them. I simply took the shepherd’s cheese from the supermarket, which looks similar to feta. Feta is also possible of course 😉 Then add the yogurt sauce and the sauce made of oil, paprika and tomato paste and serve the eggs Panagjurischte, for example with flatbread.

We are always enthusiastic about these simple, but all the more delicious recipes. Especially when we come across these recipes rather accidentally (so thanks again to Deniz). The eggs Panagjurischte are a great breakfast alternative for us but also great if you don’t have enough air for a lavish dinner.
